Warm Chunky Banana Oatmeal Bread

Today felt like a day to knock out breakfast and dessert in one shot.  Boom...DING!  What a great idea!  Chunky Banana Oatmeal Bread!  It's like breakfast...and dessert...in one!  There were 3 ripe bananas sitting on our kitchen table that had been looking at me for days now, begging me not to dispose of them in the same manner and with the same fate that was received by their predecessors.  In the trash.  However, I should mention that they were laid to rest in a Simple Human trash can...so it was a fancy burial, to say the least.

I regularly eat oatmeal with milk, cinnamon {a few teaspoons full} and 2 packets of splenda.  It is filling, and fulfilling.  It keeps hunger at bay and is so good for you...and me...that I wanted to find someway to bake something as equally satisfying and delicious.  I went to WeightWatchers.com.  They have a gazillion recipes that are always readily available to help you stay on track.  I love it!!

In my house I have an eager-to-please adorable toddler girl who is always running around and getting in the mix...today, I was able to actually get her in the mix, literally.  Today, we baked together.  Now when she grows up she'll be able to say, "I've been baking with my mom since I was 2 and a half." ❤  I always wondered when that magical moment would present itself, and how it would actually play out.  I must say, it was much easier than I thought it would be to include her.  Kids can cook.  Kids can bake.  It's fun.  We collected all of our ingredients, which she LOVED, and gathered our measuring cups and spoons because it is important to be precise.

This recipe was moist, delicious, and heavy {dense}...in a good way.  It was filling, and believe me, I had my fill!  Bake this when there are people to share it with...or freeze the leftovers for quick and easy meals or snacks.  Why?  Because you'll want to eat the whole thing...I know because I practically did. {I hope *Teresa's not reading this...  :O  }

Banana-Oatmeal Bread {official WW name}

This nutritious bread is easy to mix up and will make the whole house smell wonderful.
{You might add some cinnamon or different spices...to...Spice it up}

Ingredients



1 1/4 cup(s) all-purpose flour   

1/2 cup(s) unpacked brown sugar   

1/2 tsp table salt   

1/2 tsp baking soda   

1/4 tsp baking powder   

3 tsp canola oil   
  1 large egg(s), beaten   
  2 large egg white(s), beaten   
  3 large banana(s), ripe [I left mine chunky]  

1 cup(s) uncooked old fashioned oats   

Instructions

  • Preheat oven to 350°F. In a large bowl, stir together dry ingredients. Add oil and eggs; mix thoroughly.
  • In a smaller bowl, mash bananas with a potato masher or fork {mine were a bit chunky}. Add bananas and oatmeal to batter.
  • Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 45 to 55 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes.
