Tomorrow I'm volunteering TODAY I volunteered to help set up a mini breakfast buffet at a meeting for some K-teachers at a school near my church, and I couldn't have been more excited!

I baked some savory mini scones, since there tends to be an overload of sweets at these sorts of things.. turns out, the assortment was quite appropriate;  not too much sweet, not too much savory.. everything was JUST RIGHT.

Sun Dried Tomato Feta Scones::
2 C White Whole Wheat Flour {next time I would try reducing to 1 3/4C..thanks +King Arthur Flour }
1 T Baking Powder
1/2 tsp Garlic Salt
4 T Cold Unsalted Butter, Cut into Cubes
3/4 C Heavy Cream
1 egg slightly beaten
4 oz Crumbled Feta Cheese
1/4 -1/2 C Sun Dried Tomatoes, jarred in olive oil {chopped}
2 Green Onions, finely sliced {or a little more for a stronger flavor}

Instructions
  1. Preheat oven to 400º F. Place flour, baking powder, garlic salt, and butter in a bowl or food processor. Cut with pastry cutter, two knives, or your fingers.. OR pulsate everything in 3-second intervals until the mixture resembles coarse meal.{I used a pastry cutter}
  2.  
  3. Transfer to a large bowl. Stir in the heavy cream and egg, mixing the dough by hand or with a fork until it comes together. Add feta cheese, sun-dried tomatoes, and green onions. Gently mix the ingredients by hand until the savory ingredients are evenly distributed. On a floured surface, form a big dough ball. Flatten the dough into a 1 inch disk and cut it in 8 equal pieces. Bake for 15 minutes on a baking stone or a baking sheet lined with parchment paper. Remove scones from baking sheet and cool on a wire rack.
Alternate::
You may also pat/roll into a square and cut into 16 triangles {cut in 4 squares, then cut each small square into 4 triangles each} and press into a mini scone pan {I tried my mom's made by NordicWare from +Williams-Sonoma}  or this one is the same Nordic Ware Cast Aluminum Mini-Scone Pan.

It was brand new, never been used, so I sensed my mom's hesitation in letting me borrow the pan.  Believe me,  I went out searching for my own.  Did you know that there isn't a major store here in San Diego that carries that pan?!  I mean, +Cost Plus World Market , NO.. +Bed Bath & Beyond , NO.. +Target , NO.  You get my point.

I loved using the pan, and look forward to baking some more scones in it!  I also think any type of mini pan would work:  I want to try mini scones in a mini bundt pan.  Have you ever?  Let me know how it turned out.

Well, turns out she didn't have a problem with letting me use her pan, and so everything was handy dandy, nifty wifty.  Maybe if I don't give it back it'll be my early Christmas present.  You think?  No, me either.  She pretty much enjoys her stuff.

Bake these little babies in the oven for 15 min {I over baked mine a tad since it was my first time making mini scones with white whole wheat flour ..I ALWAYS use +King Arthur Flour }.. take them out, invert, and let cool.  Your house will smell so savory delicious while they're rising in the oven.

 I sampled two!  I thought I'd better try another.. and that could've lasted all day.  Good thing I put the lid on the container and hid them until the next morning {aka today}!

TinyBaker loved them!  She couldn't wait to taste our creation.

To compensate for the ever-so-slightly dry mini scone {which really just might be typical}, I mixed the rest of the feta {2 oz} with 4tsp oil from the sun-dried tomato jar and about 4 T chopped sun-dried tomatoes.  I mixed it all together, added some fresh ground pepper, and just a hint of garlic salt.  I think it'll be perfect tomorrow morning as an accompaniment to the mini scones!  Maybe too, a little shmear of whipped cream cheese and then this sort of tapenade dip on top??  HECK YES, I think!!
