A friend of mine was going to gift us with a really nice woodworking tool.  I wanted to gift him with some baked goods, but alas, no time to bake.  Has this ever happened to you?

No-Bake Chocolate Peanut Butter Oatmeal Cookies are the solution; the tasty solution, to this predicament.  They have all of life's most essential ingredients: chocolate, peanut butter, and oatmeal to keep it healthy.

They take about a 30 minutes to mix up and quickly harden in the freezer.

I pretty much ate most of them, except for the ones that actually made it out of the house for my friend!

These are one of the easiest things for kids to help out with in the kitchen.  They can gather the ingredients, add all items into the pot, and then after you boil the mixture, they can scoop out onto a tray lined with wax paper, or into a mini muffin tin!  Easy!

Ingredients:
2 cups granulated sugar {I'm going to try 1-3/4C next time}
4 tablespoons cocoa {I had Nestle unsweetened cocoa}
1 stick butter {unsalted}
1/2 cup milk {even nonfat/fat free works!}
1 cup peanut butter {natural, organic, ground peanuts}
1 tablespoon vanilla {Nielsen-Massey Mexican Vanilla was yummy}
3 cups oatmeal {Quaker Oats, bought in bulk from Costco}

And now, the recipe without commentary:
  • 2 cups sugar
  • 4 tablespoons cocoa
  • 1 stick butter
  • 1/2 cup milk
  • 1 cup peanut butter
  • 1 tablespoon vanilla
  • 3 cups oatmeal

Directions:
In a heavy saucepan bring to a boil, the sugar, cocoa, butter, and milk. Boil for 1 minute then add the peanut butter, vanilla, and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.  {optional: scoop and drop into lined mini muffin tin to make for super easy bake-and-take parties, class sharing, etc.}


I used a small cookie scoop.  It made it super quick and easy to get these tasty cookies scooped out.  I put some on a cookie sheet with wax paper and some into a mini muffin tin lined with mini muffin papers.
