This is my first time participating in a recipe challenge, and I must say I was a little nervous, but ready to try something new!!  This is a huge helping of Purpose & Pizzazz!..and delicious flavor!

With a new challenge, comes a new recipe.. and this one is sure to delight the palate!

This was like a +Food Network Chopped experience, as as the deadline approached, I got even more nervous and had to step up my game.  But you know what?  I'm glad I watch so many foodie shows because it really helps when wanting to create something new!

All of Melissa's Produce and products are incredibly fresh.  The fruit was so sweet and juicy.  The rhubarb was vibrant in color.  The salsa had incredible flavor.  The young coconut was yummy, and the coconut water was so refreshing.  I tasted some by itself.  Just the perks of the job, you know.

I almost feel like Bobby Flay preparing and eating a spicy dessert.  But then again, I do live so close to the Mexican border that I should be used to Tapatío on everything and Tajín on tap!

This dessert can be eaten at brunch time, lunch time, dessert time, or anytime; with or without the glaze.  But in my opinion, it is much better with the glaze.  It enhances and elevates the dish.

Rhubarb & Stone Fruit Crumble with Melissa's Spicy Fruit Glaze
Melissa's Box Ingredients: Peaches, Nectarines, Rhubarb, Baby Coconut/Water, Melissa's Hot Hatch Chile Salsa 

INGREDIENTS:

Fruit Filling
  • 5 Peaches, white or yellow
  • 5 Nectarines
  • 5-7 Rhubarb stalks {rinse, dried, and make sure you remove any/all leafy stems, as those parts are inedible and are harmful if ingested.  {all fruit/veg chopped evenly yields about 6 C of fruit/veg}
  • 1 Melissa’s Young Coconut 
  • 1 Melissa's Coconut Opener
  • 1/8 tsp Lemon Extract
  • 1/4 tsp Vanilla Extract
  • 2T All-Purpose Flour
  • 1/4C Light Brown Sugar
Crumble Topping
  • 1-1/2C Shortbread Cookie Dough, chilled and crumbled {unbaked}
  • 1/2C Oats
  • 1/2C Light Brown Sugar
  • 1/4C Organic Unrefined Coconut Oil
Spicy Glaze
  •  1/2 C Melissa's Hot Hatch Chile Salsa {blended with 1/4C coconut water until smooth}
  •  2/3C Melissa's Young Coconut Water {from young coconut}
  •  2/3C 100% Pineapple Juice

Directions:

Preheat oven to 375ºF.

Dice fruit/rhubarb into even-sized pieces. Yields about 6 cups.
Put into a bowl.
Mix brown sugar, extracts, and flour.
Toss together with fruit and let sit while you prepare the topping ingredients.

In a separate bowl, mix all topping ingredients together.

Spread fruit into dish.  I used an 11x13 inch glass Pyrex dish.
Sprinkle and spread topping to cover all of the fruit.

Put in oven, center rack, and bake for 30-35min.  Set the timer.
When your timer goes off, remove crumble from oven and set to cool.
Tip: Use a dish deep enough that your fruit will not bubble over.  Otherwise, set a pan beneath the dish to prevent spills in your oven.  Those are a bear to clean up.

While your crumble is baking, make the glaze.

Add equal parts of pureed salsa, coconut water, and 100% pineapple juice together in a saucepan {I added 2/3C of everything to make 1/3C glaze.  Bring to boil over med-high heat.  Stir occasionally so it doesn't burn.  When liquid begins to boil, stir frequently and watch closely.  When the sauce reduces to half and sticks to the back of a spoon, turn off and remove from heat.  This takes about 5-10min.  Let cool in the pan, or pour into a heat-safe dish to cool.  Like a miracle, this glaze will have a tropical flavor with heat.. and taste NOTHING like salsa.  :)  Mmmm..

Glaze Tip: Add double the amount of liquid that you want to produce. {i.e. 1C will reduce to 1/2C, 1/2C will reduce to 1/4C}  I added 2/3 C of everything.  This also tastes good warm or chilled.  Really, this just means I'm ready to eat whenever.  Aren't you?

Serving Tips:
-Drizzle with ginger syrup
-Sprinkle turbinado or sanding sugar on top for added crunch/texture
-Dollop with whipped cream..because we all love that!
-Serve over vanilla bean ice cream
-or 'E', all of the above!
